Mix flour and salt in a plastic bag. Add the chicken breast to the bag, close and shake to coat chicken evenly. Heat the oil in a large non-stick skillet over medium-high heat. Add the chicken and cook, turning once, for 5 minutes or until chicken is golden and opaque near the center. Remove to a plate and use skillet for sauce.

Heat oil in the skillet over medium-high heat. Add apple wedges and saute for 3 to 4 minutes until lightly browned, then remove to a bowl. Add the cider, broth and sage to the skillet. Boil gently for 4 minutes or until slightly syrupy. Sitr in the scallions and sour cream. Remove from heat and stir in the apples, then spoon over the chicken.
