Apple Muffins

Beat the egg and then stir in the milk, shortening, sugar, salt, cinnamon, lemon juice and vanilla. Sift together the flour and baking powder and then stir into the milk mixture until just blended. Fold in the apples and then fill greased muffin cups 2/3rds full with batter. Bake at 450° for 20 minutes or until brown.
