Asparagus with Lemon Butter

Snap off the tough ends of the asparagus, then remove the scales with a vegetable peeler. Melt the butter in a skillet, then add the asparagus and saute for 3 minutes or until crisp-tender. Add the salt and pepper, then remove from the heat. Toss with the lemon zest and juice. Garnish with strips of rind.
