Preheat the oven to 425°. In a large roasting pan in the oven, melt the butter or margarine, then remove the pan from the oven. Meanwhile, on waxed paper, combine the bread crumbs, salt and pepper then set the mixture aside. In a large bowl, mix the mustard, honey, lemon juice, ground ginger and garlic. Add the chicken thighs, and mix until each chicken thigh is coated with mustard mixture. Coat the chicken thighs with bread crumb mixture. Arrange the coated chicken thighs, skin-side down, in melted butter or margarine in the roasting pan. Bake 35 minutes then turn the chicken thighs and bake 10 minutes longer or until golden brown and tender. While the chicken is baking, prepare the potatoes in the skillet as the label directs. Serve the chicken with the potatoes.
