Basic Deviled Eggs

Place the eggs in a single layer in a saucepan and add water 3-inches deep. Bring to a boil and cover, then remove from the heat and let stand for 15 minutes. Drain immediately and fill the saucepan with cold water and ice. Tap each egg firmly on the counter until cracks form all over the shell. Peel under cold running water. Slice the eggs in half lengthwise, and carefully remove yolks. Mash the yolks with mayonnaise. Add the relish, mustard, salt and pepper, then stir well. Spoon the yolk mixture into the egg whites and garnish with paprika if desired.
