Blueberry Pancakes

Delicate blueberry pancakes drizzled in blueberry sauce are a perfect way to start a morning!

(Prepare the Blueberry sauce below, keep warm while preparing pancakes.)

Beat eggs in bowl. Add salt, baking soda and cake flour. Stir in the sour cream, sugar and lemon peel and whisk until smooth. Fold in blueberries.

Generously spray griddle with nonstick cooking spray. Heat over medium-high heat until water droplets sizzle when sprinkled on griddle. Add butter and allow it to melt. Spoon batter by tablespoonsful to form 2-inch pancakes. Cook on 1 side until tops are bubbly and edges set, 3 to 5 minutes. Gently turn pancakes, cook 1-2 minutes. Transfer to plate.

Melt another 1 tablespoon butter and continue. Drizzle with Blueberry Sauce, serve, and enjoy!

Ingredients:

Instructions:

Combine blueberries, maply syrup, cinnamon and lemon juice in small pan and simmer 10 minutes. Makes roughly 1 cup of sauce.
