Butter Cookies

Beat the butter and sugar at medium speed with an electric mixer until fluffy. Add the egg and vanilla, beating well. Add the flour, beating just until the mixture is blended. Divide the dough into 3 portions, then roll each portion on wax paper into a 12-inch log. Cover and chill for 8 hours. Cut each log into 1/2-inch thick slices and place on lightly greased baking sheets. Press your thumb in the center of each slice to create an indentation and fill with 1/2 a teaspoon of preserves. Bake at 350° for 10 minutes or until the edges are lightly browned. Remove to wire racks to cool. Freeze if desired.
