Carrot Cake

Ingredients:

• 2 cups sugar
• 4 eggs
• 1 1/2 cup Crisco oil
• 2 cups flour
• 2 teaspoon soda
• 1 teaspoon salt
• 1 tablespoon cinnamon
• 2 teaspoon vanilla
• 3 cups grated carrots

Instructions:

Cream sugar and eggs. Add oil and vanilla. Sift together dry ingredients and add to egg mixture. Fold in carrots. Pour into greased and floured 9-inch cake pan. Bake at 350° about 35 to 40 minutes.

Icing

Ingredients:

• 1 stick butter or margarine
• 1 (8oz) package cream cheese
• 2 1/2 cup powdered sugar
• 1 cup chopped walnuts

Instructions:

Mix all ingredients together, spread on top of cake.
