Ingredients:
- 4 large baking potatoes
- 1/4 cup mayonnaise
- 2 tablespoons dijon mustard
- 2 hard-cooked eggs, chopped
- 2 teaspoons sugar
- 3 tablespoons green bell pepper, diced
- 3 tablespoons celery, diced
- 3 tablespoons onion, diced
- 2 tablespoons sweet pickle relish
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
Peel the baking potatoes and cut into 1-inch cubes. Cook in boiling water to cover in a dutch oven for 25 minutes or until tender, then drain and cool. Stir together the potato and remaining ingredients, then cover and chill.
