Brown the beef in a large skillet until cooked through, then drain. Stir in the spaghetti sauce and water and bring to a boil, then reduce the heat to low. Stir in the pasta and cover. Let cook for 15 minutes. Stir in the ricotta cheese and cover, letting cook for 5 minutes. Stir in 1 cup mozzarella cheese, then sprinkle with the remaining mozzarella and cover. Let stand over low heat for 5 minutes or until the cheese has melted.
You can subsititute ground turkey or crumbled sausage for the ground beef.
