Beat the egg, then add the milk and melted butter. Add the flouor next and beat until smooth. Lightly grease the crepe pan and pour in 3 tablespoons of batter. Brown on one side only. Spread 1/4 cup of almond creme filling on the unbrowned side of the crepe, then roll and place in a 12x8 baking dish. Brush with butter and bake at 350° for 20 to 25 minutes. Before serving, spoon the brandied cherry sauce over the crepes.

Almond Filling

Combine the sugar and flour, then add the milk and cook, stirring until thickened and bubbly. Beat the eggs and yolks slightly, then stir in a small amount of the hot mixture into the eggs. Pour the eggs into the hot mixture and cook, continuously stirring until it reaches boiling. Remove from the heat and beat until smooth. Stir in the remaining ingredients and cover with wax paper, letting cool.
