Coat the chicken with flour. In a small bowl, combine the eggs, 3 tablespoons of water, 1/2 cup of cheese, 1/3 cup parsley and salt. Place the bread crumbs in another shallow bowl. Dip the chicken pieces first in the egg mixture, then in the bread crumbs. Heat 3 tablespoons of margarine and the vegetable oil in a large skillet, then add the chicken and cook over medium heat until the chicken is browned, roughly 10 minutes. Remove from the heat and place in an 11x7-inch baking dish. In a saucepan, heat the cream, 1/4 cup water and 1/4 cup margarine until the margarine melts. Stir in 1/2 cup of cheese, cook and stir over medium heat for 5 minutes. Add 1/4 cup of parsley, stirring, then pour the sauce over the chicken. Top each chicken breast with a slice of mozzarella cheese. Bake at 425° for 10 minutes or until the cheese melts.
