Preheat the oven to 425°. Coat the chicken in flour. Mix the eggs, water, romano cheese, parsley and salt. Dip the chicken in the egg mixture, then in the bread crumbs. Heat the butter and oil in a large skillet. Cook the chicken breasts over medium heat until brown, about 15 minutes, turning once. Remove the chicken and place in a 11x7-inch baking dish. Pour the cheese sauce over the chicken and top with a slice of mozzarella. Bake until the cheese melts and the chicken is tender, roughly 8 minutes.

Heat the whipping cream, water and butter in a saucepan until the butter melts. Add the cheese and stir over medium heat for 5 minutes. Stir in the parsley and use.
