Chocolate Eclairs

Bring the water to a boil in a small saucepan, then add the margarine. When the margarine has melted, dump in the flour all at once. Add the salt, then briskly stir the mixture over low heat until a dough forms and leaves the sides of the pan. Remove from the heat then add 1 egg and beat briskly with a wooden spoon. The mixture will appear curdled, but keep beating and it will turn smooth and yellow. Add the second egg and beat again until smooth. Spoon out onto an ungreased cookie sheet in small oblong shapes. Bake at 375° for 25 minutes. Let cool, then make a slit in the sides with a sharp knife and fill with vanilla pudding or cream filling. Dust with powdered sugar or frost with chocolate.
