Chocolate Mousse

Cook 1/4 cup of cream, chocoalte, corn syrup and butter in a heavy saucepan over low heat, stirring until the chocolate melts. Cool. Beat the remaining 3/4 cup of whipping cream, powdered sugar and vanilla at high speed with an electric mixer until stiff peaks form, then fold into the chocolate mixture. Cover and chill for at least 30 minutes.
