Cornstarch Pudding

In a double boiler, scald the 2 cups of milk. Mix together the cornstarch, sugar and salt, then add the cold milk to the dry mixture and stir until smooth. Add the mixture to the scalded milk and cook for 15 minutes over hot water, stirring constantly until the pudding thickens, then once thick only occasionally stir. Cool slightly, then add the vanilla and chill.

For a more delicate pudding, beat 2 egg whites until stiff then fold into the finished pudding.
