Creme Brulee

In a double boiler, scald the heavy cream. Beat the eggs, brown sugar and salt until smooth. Add the cream slowly. Put in the double boiler and cook for 5 minutes, beating constantly with an electric mixer. Do not overcook. Pour into a service bowl in a layer not more than 2-inches deep. Chill. Sift 1/4-cup of brown sugar over the top and glaze. Chill at least 4 hours or until the glaze is crackly.
