Crunchy Catfish

Thaw the fish, if frozen. Rinse, then pat dry with paper towels. Combine the egg, mustard, milk and pepper, beating with a whisk or fork until smooth. Pour the mixture into a shallow dish. Coat the fish with flour. Dip the fish in the mustard mixture, then in the crushed pretzels to coat both sides. In a large skillet, cook the fish in hot oil over medium heat for 3 to 4 minutes per side or until golden and the fish flakes easily with a fork. Reduce the heat as neccessary to prevent burning. Serve with lemon slices, if desired.
