Flat Bread

In a large bowl, sprinkle yeast over water. Stir in the sugar and set aside until foamy - about 5 minutes. Stir in 3 cups flour, the oil, and salt until all flour has been moistened.

Turn dough out onto floured surface. Knead dough, adding more flour if necessary, until smooth and elastic - about 8 minutes.

Wash, dry, and lightly oil mixing bowl. Place dough in oiled bowl, turning to bring oiled side up. Cover bowl with cloth; let dough rise in warm place, away from drafts until double in size - about 30 minutes.

Turn dough out onto large baking sheet. With floured rolling pin, roll dough into an oval about 16 inches long and 8 inches wide. With logn knife, score bread lengthwise at 1/2-inch intervals. Cover with clean cloth and let rise 30 minutes.

Place oven rack in highest position. Heat oven to 400°F. Bake bread 20 to 25 minutes or until lightly browned. Cool bread on wire rack.
