French Chocolate Mousse

In the top of a double boiler, put the chocolate and water and stir over hot water until melted. Separate the eggs and beat the whites until stiff then set aside. Beat the yolks until thick and lemon-colored. Beat in the chocolate and vanilla. Fold into the whites then spoon into cocktail glasses. Chill for at least 12 hours, then top with chopped nuts if desired.
