Fresh Apple Pie

Place apples in the unbaked pie shell. Add orange juice and lemon zest. Combine the flour, sugar and spices together, and sprinkle over the apples. Dot butter in the center of the pie. Cover with the top crust and bake at 450° for 20 minutes. Reduce the temperature to 400° and bake for 15 minutes; reduce again to 350° and bake for 10 more minutes. Brush the top of the crust with a mixture of 1 tablespoon sugar and 1/4 cup of milk.
