Beat egg and then stir in milk, shortening, sugar, salt, cinnamon, lemon juice, and vanilla. Sift together the flour and baking powder. Stir in the milk mixture to the flour mixture until just blended, being careful to not overmix. Fold in the peaches and fill greased muffin cups 2/3rds full. Bake at 450° for 20 minutes or until brown in color.
