Golden Waffles

Preheat a waffle iron. In a large mixing bowl, combine the flours well with the baking powder and salt. In a smaller bowl, combine the egg yolks, sugar and oil, then stir in the milk and add this mixture to the flour mixture, stirring well. In a clean, dry bowl, whip the egg whites until they hold soft peaks, then fold them into the batter. Using plenty of butter on the iron, add about 3/4 cup of batter at a time and bake according to the waffle-iron maker's instructions, or until the waffles are crisp and golden. Serve with maple syrup.
