Ingredients:
- 3 cups rice, cooked
- 1 cup parsley, chopped
- 1/2 cup cheddar cheese, grated
- 1/3 cup onion, chopped
- 1/4 cup green pepper, chopped
- 1 clove garlic, minced
- 14 1/2oz can evaporated milk
- 2 eggs, beaten
- 1/2 cup vegetable oil
- 1 tablespoon salt
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ac'cent
- 1 lemon, juice & zest
Instructions:
Mix parsley, rice, cheese, onion, green pepper, and garlic in a greased 2-quart casserole. Blend the rest of the ingredients and then mix into the rice. Sprinkle with paprika and bake at 350° for 45 minutes or until it has the texture of a soft custard.
