Green Tomato Relish

Requires 13 sterilized pint jars.

Put cabbage, onions, peppers, hot pepper through a coarse grinder (or chop very finely). Mix with the tomatoes, add 1/4 cup of salt and put into a cheesecloth bag. Hang up over the sink to allow all the juice to drip out. Pour vegetables out of cheesecloth bag into a 6-quart kettle, then stir in the sugar, 1 teaspoon salt and vinegar. Tie the spices in a cloth bag and put into the kettle with the vegetables. Cook over low heat for about 30 minutes or until the vegetables are well done. Stire frequently to prevent burning. Discard the spices and ladle immediately into hot sterilized jars and seal.
