Combine oil and seasonings in small bowl. Rub over pork.
You can season the pork ahead of time, just wrap and refrigerate up to 24 hours ahead.
Prepare covered grill for indirect cooking or preheat oven to 375°.
Arrange 40 charcoal briquettes in grill, open vents and ignite. When white ash begins to form on coals, place half at 2 opposite sides of grill. Place disposable foil roasting pan across center of grill. Plac epork loin on grill above roasting pan. Cook, turning every 15 minutes until thermometer inserted in thickest park reaches 160°F and juices run clear when piercing meat, roughly 60 to 70 minutes.
Heat 1 tablespoon olive oil in roasting pan over high heat. Add pork and cook until browned on all sides, 5 minutes. Transfer to oven and roast until meat thermometer inserted in thickest part reaches 160°F and juices run clear, roughly 60 to 70 minutes.
Let pork stand at least 10 minutes before slicing. Serve warm or room temperature.
