Grilled Polenta

Bring the water, broth and garlic to a boil in a medium saucepan, then reduce the heat to a medium. Add the cornmeal, 1 tablespoon at a time, stirring constantly until smooth. Cook, stirring constantly with a wooden spoon for 5 minutes or until the mixture is very thick, then remove from the heat and stir in the cheese, thyme, salt, ground pepper and red pepper. Spoon the mix into an 8-inch square baking dish coating with the cooking spray. Cover and chill for 1 hour. Cut the polenta into 6 squares and coat both sides with the cooking spray. Grill, covered, over medium-high heat for 3 minutes on each side or until browned. Serve immediately.
