In a plastic bag, combine the 1/4 cup olive oil, lemon juice and 4 cloves garlic with the pork chops and let marinate in the refrigerator overnight. Drain the marinade. Preheat the oven to 375°. Heat 2 tablespoons olive oil in a large skillet over high heat and brown the prok for 2 to 3 minutes on each side. Remove the chops from the skillet and arrange in a single layer in a baking dish. Bake for 10 to 15 minutes. In the same skillet over low heat, cook the garlic until golden in color. Stir in the oregano, thyme and parsley, then pour the herb mixture over the chops.

In a large pot with a lid, boil the potatoes in salted water until soft, roughly 10 minutes. Drain all but 1-inch of water from the pot. Add the garlic, cream, oil and parsley. Whip until the potatoes are smooth, adding more cream if needed. Season with salt and pepper.
