Bring the water to a boil in a large saucepan, then add the grits and the salt. Cook according to the package directions, then remove from the heat. Stir in the garlic, cheese and chives. Beat the egg yolk until thick and lemon colored. Gradually stir about 1/4 of the hot mixture into the yolk and then add back to the remaining hot mixture, stirring constantly. Spoon the mixture into 6 greased ramekins. Place the ramekins in a large pan and pour hot water to a depth of 1-inch in the pan. Cover with aluminum foil and bake for 30 minutes at 350°. Remove from the oven and let cool. Invert timbales onto a greased baking sheet; remove from ramekins. Bake at 300° for 5 minutes or until thoroughly heated.
