Beat the eggs in a mixing bowl, then add the salt, baking soda and cake flour. Stir in the sour cream, sugar and lemon zest and whisk until smooth. Fold in the blueberries. Generously spray the griddle with nonstick cooking spray. Heat over medium-high heat until the water droplets sizzle when sprinkled on the griddle. Add butter and allow it to melt, then spoon the batter to form 2-inch pancakes. Cook on 1 side until the tops are bubbly and the edges set then turn over and cook for 1 to 2 inches longer. Melt another 1 tablespoon of the butter and continue cooking the batter. Serve as soon as they were cooked. Serve with warm blueberry sauce.
