Clean the potatoes well, then slice into 1-inch cubes and place in a pot of cold water. Rinse several times until the water runs clear. Add enough water so the potatoes are covered by 1 inch of water. Place the pot on high until the water comes to a boil, add 1 teaspoon salt and turn the heat to low and cover partially. Let the potatoes simmer for approximately 20 minutes or until soft enough to mash. While the potatoes are cooking, place the cream and cheese in a small saucepan and heat on medium-low until the cheese has melted. Turn off the heat and let sit. Drain the potatoes, then add the cheese mixture along with salt & pepper to taste. Mash the potatoes with a potato masher or with a fork, but do not use a mixer. Serve immediately or cover the pot and let sit on low until ready to eat.
