Heavenly Potato Salad

Bring a large saucepan of salted water to a boil, then add the potatoes and reduce the heat, simmering for 15 to 20 minutes or until tender. Drain and cool, then cut the potatoes into 1-inch cubes. In a large bowl, combine the potatoes, eggs, onion and celery. Stir together the mayonnaise, relish, mustard, salt and pepper in a small bowl and pour the dressing over the potatoes. Toss gently until thoroughly combined. Serve the salad on a bed of greens and sprinkle with paprika. Garnish and serve.
