Hominy Casserole

Ingredients:

• 2 (15oz) cans hominy, drained and rinsed
• 1 (4oz) can chopped green chilies, undrained
• 1 tablespoon melted butter
• 1 1/2 to 2 cups dairy sour cream
• salt and pepper to taste
• 1 cup monterey jack or cheddar cheese, shredded

Instructions:

Combine the hominy, chilies, butter, sour cream, salt, pepper and 1/2 cup of cheese, stir to mix. Spoon into lightly greased 2-quart casserole. Bake at 350° 25 minutes or until the casserole is hot. Sprinkle with the remaining cheese during last 10 minutes of baking time.
