Individual Cheesecake

This recipe serves 35 individual cheesecakes - great for a party!

Ingredients:

• 35 Vanilla wafers
• 35 cupcake foil papers
• 3 (8oz) cream cheese packages
• 3 eggs
• 1 cup sugar
• 1 teaspoon vanilla
• 1 tablespoon lemon juice
• 1 (21oz) can cherry pie filling

Instructions:

Combine cream cheese, eggs, sugar, vanilla, lemon juice together, beat until smooth. Place cupcake papers in a muffin pan with 1 vanilla wafer in the bottom of each paper. Fill 3/4 full with cream cheese mixture.

Bake at 350° for 15 minutes. Cool slightly, then top with cherry pie filling.
