Individual Cheesecakes

Ingredients:

• 35 vanilla wafers
• 35 cupcake foil papers
• 3 (8oz ea) packages cream cheese
• 3 eggs
• 1 cup sugar
• 1 teaspoon vanilla
• 1 tablespoon lemon juice
• 1 (21oz) can cherry pie filling

Instructions:

Combine the cream cheese, eggs, sugar, vanilla and lemon juice. Beat until smooth. Place the cupcake papers in a muffin pan and place a vanilla wafer in the bottom of each pan. Fill 3/4 full with the cream cheese mixture. Bake at 350° for 15 minutes. Cool slightly and top with the cherry mixture.
