Jalapeno Grilled Pork

Seed and chop 3 peppers, then stir together the peppers, garlic, tomato, lime juice, cilantro and 1/4 teaspoon of salt. Butterfly the roast by making a lengthwise cut down the cetner of 1 flat side, cutting to within 1/2-inch of the bottom. From the bottom of the cut, slice horizontally to 1/2-inch from th eleft side, then repeat on the right side. Open the roast and place between 2 sheets of heavy plastic wrap and flatten to 1/2-inch thick using a mallet or rolling pin. Spread the pepper mixture over the roast, then roll up and tie at 1-inch intervals with strings. Place, seam side down in a lightly greased 11x7-inch baking dish, then cover and chill for 8 hours.

Seed and chop the remaining jalapeno peppers. Stir together the peppers, butter and remaining salt. Grill the pork, covered, over medium-high heat for 40 minutes or until 160° in the thickest portion, turning and basting often with the butter mixture. Slice and serve with gourmet greens.
