Rinse the chicken pieces with cold water, then pat dry and place in a glass dish. Mix the salt, pepper, garlic and poultry seasoning together and sprinkle over the chicken. Cover the dish and set aside for 15 minutes, or refrigerate up to 12 hours. Pour the oil in a deep skillet and heat until almost smoking hot. Place the flour in a bag and shake the individual pieces of chicken until well coated. Dust off excess flour. Fry the chicken, a few pieces at a time, in the hot oil for 25 to 30 minutes, turning once until they are golden brown and cooked through. Drain on paper towels, and serve warm or at room temperature.
