Soften the yeast in the lukewarm water. Add the shortening and sugar, then mix into the scalded milk. Cool to warm then add the flour and beat well. Stir in the yeast and eggs, mixing well. Add additional flour as needed to make a soft dough. Turn into a lightly floured bowl and knead until smooth, then cover with a cloth. Let the dough rise for 2 hours, then cut into pieces the size of small eggs. Shape into balls and place on a cookie sheet. Let rise for 30 minutes, then press down in the center of the ball making a shallow cup. Fill cup with filling and bake at 375° until done.
