Light Buttermilk Biscuits

Preheat the oven to 450°. In a large bowl, stir the cake flour, baking powder, baking soda and salt until combined. With a pastry blender, cut in the shortening until evenly combined. Add the buttermilk to the flour mixture and mix together by hand just until dough forms. On a lightly floured surface, pat the dough into a 7-inch square. Cut the dough into 4 strips, then cut each strip crosswise into 4 pieces to make 16 biscuits. Place the biscuits on an ungreased large cookie sheet and bake the biscuits for 12 to 15 minutes, until lightly golden. Serve the biscuits warm or cool them on a wire rack to serve later. Reheat if you like.
