Magical Carrot Cake

Preheat oven to 350° and spray a 9-inch square baking dish with non-stick cooking spray and set aside. Sift together the flour, cornstarch, baking powder, soda, cinnamon and allspice, then set aside. In a large bowl with an electric mixer, beat the eggs, vanilla, pineapple, applesauce, oil and fructose. Slowly mix in the dry sifted ingredients, beating on medium for 3 minutes. Stir in the carrots, orange zest, raisins and walnuts, mixing thoroughly.

Transfer the batter into the prepared square pan and spread evenly. Bake at 350° for 50 minutes, or until a toothpick comes out clean from the center. Remove and let cool on a rack.
