Ingredients:
- 1/4 cup mayonnaise
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon celery, finely chopped
- 2 teaspoons lemon juice
- 1 teaspoon jalapeno pepper, minced
- 2/3 cup mango, peeled and chopped
- 1 (14 1/4oz) can crabmeat, drained and rinsed
- 4 lettuce leaves
- 2 english muffins, split and toasted
- 1 tablespoon slivered almonds, toasted
Instructions:
Combine first 5 ingredients in a large bowl, stirring until blended. Add the mango and crabmeat and toss gently to coat. Arrange 1 lettuce leaf on each half of english muffin and top evenly with the crabmeat mixture. Sprinkle each sandwich with slivered almonds.
