Ingredients:
- 2 eggs
- 1 cup daisy brand sour cream
- 1/2 cup wesson canola oil
- 1 can (1lb 1oz) cream style corn
- 1 1/2 cups yellow cornmeal
- 1 cup flour
- 4 teaspoons baking powder
- 2 teaspoons salt
- 2 to 5 jalapeno peppers, chopped, seeded
- 1/2 cup red bell pepper, finely chopped
- 1/2 cup green onion, finely chopped
- 1 1/2 cups sharp cheddar cheese, grated
Instructions:
Beat the eggs, then add the sour cream, can of corn, then the oil. Combine the dry ingredients and sift into the mixture. Add the other ingredients. Pour into a greased 9x9x2-inch pan and bake for 40 to 50 minutes in a preheated 400° oven.
