In a mixing bowl, beat the egg until frothy, then add the buttermilk. Stir in the one cup of meal, plus the flour until it forms a creamy paste. Next at the sugar, soda, baking powder and salt. Mix well, beating for a full minute. Place the shortening into an 8x10-inch pan and warm the pan enough to melt the shortening, then pour the shortening into the mixture and give another stir. Lightly sift a little flour over the bottom and sides of the greased pan and pour the bread into the pan. Bake in an oven at 400° until light brown on top. The bottom, when turned onto a bread plate, should be nice and crusty. Cut in squares and serve while hot.
