Preheat over to 350°F. In a mixing bowl, cream margarine and 1 cup sugar. Add egg and beat well. Combine buttermilk and vanilla; set aside. Combine flour, baking soda and salt; add alternately with buttermilk and vanilla to the creamed mixture. Stir in rhubarb.
Spread in a greased and flour-dusted 13x9x2-inch baking pan. Combine remaining sugar with cinnamon; sprinkle over batter. Bake for 15 minutes or until cake tests done.
