Sprinkle the gealtin over the water in a 2 1/2-quart saucepan. Let soften, then add the egg yolks. Mix well. Place over low heat and stir constantly until the gelatin dissolves and the mixture thickens slightly, roughly 4 to 5 minutes. Remove from the heat. Stir in the frozen orange juice and add the almond extract. Beat egg whites until stiff, gradually adding sugar. Then beat until very stiff. Fold in the gelatin mixture and whipped cream. Line a 9x3x5-inch loaf pan with wax paper. Spoon 1/4 of the mixture into the pan. Cover with a layer of chocolate cookies. Repeat 3 times, ending with the orange mixture. Unmold and garnish with whipped cream.
