Grease muffin cups and set aside. Sift together the flour, baking powder, sugar and salt. Cut in the shortening until the mixture has fine crumbs. Add orange rind to mixture. Combine the beaten egg and orange juice and then add the dry ingredients, stirring only until the flour is moistened - the batter should be very stiff. Fill the muffin cups 2/3rds full and bake at 425° for 15 to 20 minutes.
