Oven-Baked Western Omelet

Preheat oven to 375°F. Slice green onions and red pepper into 1/4-inch thick slices. In 10-inch skillet with ovensafe handle, over medium-high heat, cook onions and pepper in 2 tablespoons hot salad oil for 5 minutes. In a bowl, mix well eggs, cheese, salt and 1/3 cup water. Pour the egg mixture over onionis and pepper in skillet. Bake 15 to 20 minutes until set.

Meanwhile, in another skillet over medium-high heat, cook sliced ham in 1 tablespoon hot salad oil until browned. Top omelet with ham and garnish with parsley.
