Pineapple Cream Pie

Combine the sugar, flour and salt then add the lemon juice, zest and pineapple and mix thoroughly. Separate the eggs and beat the yolks well. Add the beaten yolks along with the water and butter to the mixture and cook over water until it turns thick and smooth. Turn into the pie crust and top with a meringue made from the three egg whites.
