Pineapple Drop Cookies

Heat the oven to 375°. Lightly grease cookie sheets with unsalted shortening. Sift together the flour, baking powder and salt. Dissolve the baking soda in the crushed pineapple. Work the butter in a bowl until creamy, then add the sugar and beat until blended. Add the egg and vanilla and mix well. Gradually add the sifted dry ingredients, mixing well after each addition. Blend in the crushed pineapple then stir in thenuts. Drop slightly rounded teaspoonfuls of dough two inches apart on the cookie sheets and bake for 6 to 8 minutes or until lightly browned. Cool for a few minutes on the sheets before removing to wire racks.
