Dissolve the yeast in warm water. Add the butter, sugar, salt and mashed potatoes to the hot potato water, then let cool. When cooled, stir in the yeast and eggs. Add enough flour to make a stiff dough - should be all 9 cups. Turn out dough on a lightly floured board and knead well. Put into a buttered bowl, cover well, then put into the refrigerator. Punch down the dough as it rises in the frigerator. Remove the amount needed and let warm to room temperature. Shape into rolls and place on a buttered cookie sheet. Cover and let rise until doubled. Bake at 400° until browned and done, almost 20 minutes.
